Three, even after a dumb mistake on my second guess.

I began with SHIRT and got the I and R out of position. I apparently hadn’t had enough coffee to DRINK and I failed to move the I. It was still very productive yielding the starting D and adding an N. DINER was obvious.

A lucky two. (Actually I think any time you get a two, luck had a large role to play either on you first word or your second.)

Fire! That’s Danish for four but it sounds a lot better.

I was looking at my bonsai palm tree and decided to open with PLANT. Found an A and T out of position. Next, as a carnivore myself, I tried STEAK. Yum! Three letters in correct locations, leaving me with STxAx. It had to be STRAY or STRAW. I had to be wrong before I could be right.
