I like Granny Smith apples for pies - fresh apples have a much better flavor than canned. Here is an easy recipe:
Apple Crumble Pie
1 prepared pie crust, uncooked
filling-
6 c. Granny Smith apples, peeled, cored, and thinly sliced
3 T. lemon juice
1/2 c. sugar
2 T. all-purpose flour
topping-
1/2 c. all-purpose flour
1/2 t. ground cinnamon
1/2 t. ground ginger
1/4 c. real butter - cold
Line pie pan with the uncooked pie crust - do not stretch the dough, ease it into the pan.
Sprinkle apple slices with lemon juice.
Stir together 1/2 c. sugar and 2 T. flour, and toss with apple slices.
Fill pie pan with apple mixture - apples will be higher than the rim of the pan.
Preheat oven to 375º.
Stir together flour, cinnamon, and ginger. Cut in butter until crumbly.
Sprinkle apple filling with topping mixture.
(You could add finely chopped walnuts here if you want to.)
Cover pie lightly with foil and place on a cookie sheet in case it bubbles over.
Bake for 30 min., covered with foil.
Remove foil and bake 30 min. more, or until crust is golden brown.
