I've been cooking on a big induction stove top (Kuppersbusch) for over 10 years in Missouri, and I swore I would never go back to a gas range. Well, we're moving back west and just bought a home that's perfect for us, EXCEPT it has a gas range. Unfortunately, getting wiring to replace the range with an induction cooktop means busting up concrete, so I'm looking for a portable induction cooktop for now. Does anyone (looking at you, @ScoopKona) have a recommendation for a powerful portable induction cooktop? The new house is at 4,500' elevation and boiling water takes forever on the gas range while heating up the kitchen.
