I made about 12 different kinds of cookies this year. I always make a lot and give them away. I give to the firemen that service our island, the people I do business with at the bank, the postman, newpaper person, the ladies that work at the library that I frequent, the people that work at the timeshare we own at on the beach and several neighbors and friends. It keeps me busy but I wish I knew how everyone kept their baked goods so fresh when there is so many to bake!!! I filled my freezer and then kept some in the refrig. Tomorrow I will pack the rest and deliver in the morning. Just hope they are still fresh tasting.

Denise, That cake looks and sounds great! Unfortunately DH is allergic to alcohol so I don't cook anything that requires alcohol other than some small quantity that burns off during the cooking process. I'd love to jazz up an otherwise ordinary cake, though. Any suggestions for a non-alcoholic substitution for the rum in your recipe?

Amy - the alcohol in the cake cooks off and to cook the alcohol out of the glaze, add the rum before cooking the glaze.

As as alternative, use 1 c. water in the cake and 1/2 cup water in the glaze, and add 1-2 t. rum flavoring instead of real rum.

Denise, thanks so much for posting that recipe. Mine calls for a cake mix with pudding already in it, but I think yours sounds better, and looks almost too good to eat. A neighbor brought us 3 pieces of hers yesterday, and it will never make it until Thursday. (I'm talking about the 1 piece that's left!) LOL!
I've made Snickerdoodles and snowballs (or Russian Tea cookies...whatever), and I just made a batch of Red Velvet Whoopie Pies. I hope I can waddle through Christmas. ;)

Just took 2 pumpkin pies out of the oven. I'll make the DH's fave tomorrow, pumpkin with a layer of mincemeat on the bottom. My mom used to make this and he loved it.

My mom and grandmother used to make about 10 different batches of Xmas cookies when I was a kid. One use to go to the neighborhood cookie exchange(you could always tell who showed up by what came home!).

We always do cookie plates for friends . Peanutbutter kiss cookies, gobs (western Pa favorite), gingersnaps, sugar cookies, macaroons and baklava. We always try a new one or two on top the the standards.

For christmas dinner: Chocolate almond bar pie and Sweet potato pecan pie wih bourbon sauce.

I love making cookies and such, probably because I grew up with it.
What I avoid like the plague is any cookie recipe that requires a rolling pin. I can handle pie crust, but rolling dough for cookies is too time consuming.

But I'll be lucky if I make 2 batches a year, and they are usually for the elementary school bake sales.

We only make 3 kinds of cookies for Christmas at the clsmit house:

The kids (DD12 and DS9) can pretty much make the 7 layer/magic cookie bars (in our house they are called Santa Snacks) by themselves.

Then they help decorate the the best sugar cookies ever (a touch of nutmeg makes them super yummy).

They sometimes help with the mint surprises (this year with Ghiradelli mint chocolate candy bar pieces since I couldn't find any other filling -- darn! ;) )

Then the DS saw a recipe I had for fudge, so he decided he wanted to make fudge. So he did, with a little help from me. He was very bummed when he got to the "cool 3 hours or overnight" part!

Got Limoncello? From the Cakemix Doctor's newsletter

Limoncello Cake
(from Josephine Murphy, Jackson, TN)

Serves 12 to 16
Prep: 25 minutes
Bake: 48 to 52 minutes
Assemble: 10 minutes

For the cake:
1 package (18.25 ounces) yellow cake mix with pudding
½ cup Limoncello
½ cup vegetable oil
3 large eggs
1 very large or 2 small lemons (for ¼ cup lemon juice and 2 teaspoons grated lemon zest)
¼ cup water

For the glaze:
4 tablespoons butter
1 very large or 2 small lemons (for ¼ cup lemon juice and 1 teaspoon grated lemon zest)
1 cup sugar
¼ cup Limoncello, or more to taste

Place a rack in the center of the oven and preheat the oven to 325 degrees. Mist and flour a 12-cup Bundt pan, shake out the excess flour, and set the pan aside.
For the cake, place the cake mix, Limoncello, oil, eggs, lemon juice, lemon zest and water in a large mixing bowl. Beat with an electric mixer on low speed 30 seconds to incorporate ingredients. Stop the machine and scrape down the sides of the bowl. Increase the mixer speed to medium and beat for 2 minutes more, or until the batter is lighter in color and has thickened. Pour the batter into the prepared pan and place the pan in the oven.
Bake the cake until the top springs back when lightly pressed with a finger and the top is golden brown, 48 to 52 minutes. Remove the pan to a wire rack to cool 20 minutes. Run a sharp knife around the edges of the cake and invert it onto a wire rack to completely cool, 30 minutes. Poke holes in the top of the cake with a wooden chopstick, spacing them one inch apart.
For the glaze, place the butter in a small saucepan over medium heat. When it has melted, add the lemon juice and sugar, stirring constantly. Bring the mixture to a boil, and let it boil, stirring, for 4 to 5 minutes, or until it has thickened and the sugar has melted. Remove the pan from the heat and stir in the lemon zest and Limoncello.
Slide the cake onto a serving platter. Slowly spoon the glaze over the top of the cake, allowing it to seep into the holes. With the spoon, scrape up what glaze runs off the cake and spoon it back over the top, repeating this process until no more glaze puddles around the cake. Place the cake under a cake dome, preferably for several hours, before serving.
Slice and serve with a dusting of confectioners' sugar.
Note: Josephine Murphy places 1 cup finely chopped pecans in the bottom of the Bundt pan before she pours in the lemon batter.

Fern's husband made it. I can't eat it because I am gluten free.:( If you don't make your own Limoncello look for Danny Divito's brand.

All I was able to do was a chocolate cake. We've lost power again twice today, both times as I was getting ready to start baking something else.

So off to bed so I can get up early and try again. Just hope it dosen't go out again during cooking the dinner tomorrow.

I made low-carb cranberry walnut bread. I didn't use a recipe; I just improvised using some old packages of Atkins low-carb pancake mix I had lying around. (It actually came out quite good, honest!)

I made some sugar-free pumpkin pie and blueberry turnovers last week, and was planning to make more for tomorrow, but I got too tired!
