Which US State Produces The Most Potatoes?

No mystery here. With our volcanic, well-drained soil, warm days, cool nights and plentiful water make Idaho the most productive state in the country for potatoes. And the potatoes grown elsewhere in the U.S. most likely got their seed from Idaho. If you say, you're going to the store for some 'Idahos', most everyone knows what's on the shopping list.

We're not a 'one crop wonder' though. We grow lots of sugar beets, corn, and are the country's leading producer of barley for beer and about #2 in hops output. Drink up! The county where I live produces over 90% of the nation's farm-raised rainbow trout from all that constant 57-degree water that emerges from the ground year-round.

Not a state and small but PEI can give Idaho a run for that title. A lot less population and land but I would say it’s the close second potato capital of North America.
 
I've always loved all types of potatoes, and my former company made a fungicide that prevented late blight, a disease that can destroy a potato crop very quickly. This is the same disease that caused the potato famine in Ireland that sent my ancestors here. Idaho typically doesn't have problems with late blight, so we usually sold more fungicide in North Dakota and other secondary potato growing states. North Dakota produced more red potatoes, my favorite. When Idaho experienced late blight a few years in a row, my company sold a lot of fungicide there to help save their crops. I really enjoyed working in the crop protection business and dealing with farmers and crop consultants. They are great people who have many challenges to overcome to feed us.
 
@am1 BWHAHAHA! Actually, as usual, you're wrong. While PEI is the largest producer of potatoes in Canada at 26.2 cwt from 82,000 acres, that pales in comparison to Idaho's. The Idaho potato world is an impressive one. To think that as the No. 1 state of potato production in the country, they produce 13 billion pounds per year on over 310,000 acres. If you took the Idaho potato harvest and stacked them all up, the “potato mountain” would be over a MILE high and about the size of a football field! Try again.

PEI is very small place. A few times smaller then Hawaii. Let’s measure in terms of % of land or per person. Has a potato museum as well and a very famous song about PEI potatoes.

DW makes a potato salad with fingerling white, baby reds and blue potatoes for early July. I'm inclined to add some Hatch chiles and call it Firecracker potato salad. Hummy!
I like cutting mine up and roasting them with a little olive oil and homemade BBQ dry seasoning.
 
Wisconsin produces a fair amount too.
 
So a bit off the point, but there seems to be a shortage of potatoes?! As shown by Xd out tater tots on local menus, no Mexi fries which are actually stuffed tots, at TacoTime and no potatoes in Winco, one of our major grocery stores locally. Baffling!

Not so much. The time frame is between harvests. Those spuds harvested in '21 have been in cellars for 10 months or so (harvest is in Sept/Oct) and the harvest for '22 hasn't gotten underway yet. The fresh russets you'll see in stores are getting kinda tired. I bought a bag last week and they started getting soft right away. I've already pitched a few. The processors are just gearing up and hiring people (they have the same labor issues that your local businesses do). Not to worry, they're on their way. Incidentally, Winco and Albertsons/Safeway HQ is in Boise.
