What are your favorite ways to use fresh tomatoes

My garden is currently producing massive amounts of tomatoes. What are your favorite ways to use or preserve?

I just had an amazing Peanut butter toast with fresh slices of tomato. Avocado toast is also pretty good with a slice on top.

This morning I made freezer salsa. I usually make some tomato jam from the cherry tomatoes and freeze it.


I also love Caprese salad.
 
You can freeze, pressure can, pressure can salsa, antipasto, tomato sauce and lots of other things to tomato's. Our favorite thing is to eat them fresh or make canned salsa in pint jars. I like to use Mrs. Wages hot salsa mix and I add beans, corn , mangos and nacho peppers.

I quit growing them because some years we had way too many and some years hardly any.

I go on Nextdoor and post that I have tomatoes to give away, and also leave sacks on neighbors' porches and scurry away. Mrs. Bogdonavich caught Cliff last week and reminded him she doesn't eat tomatoes--I think that is actually just retaliation because we won't take more than one grapefruit from her each year, LOL! Tuesday I'll gift the CCRC marketing lady a bag. Otherwise for the bushels of cherry tomatoes the plants are producing, I spend ten minutes eating them warm in the garden, then move on to the figs while swatting away and cursing at scarab beetles.
 
I’m a sucker for a BLT or a Grilled Cheese and tomato or an occasional sliced tomato over Romaine with some tuna crumbled over it and a vinaigrette.

I‘ve got a farm about 10 minutes from my house where the tomatoes have been excellent!
 
Caprese salad - tomatoes, mozzarella (or better yet, burrata), and basil.

Also we make homemade spaghetti sauce with fresh tomatoes and now I can't eat anything else. Here's the recipe that I use: https://www.allrecipes.com/recipe/239059/fresh-tomato-marinara-sauce/ It is a little thinner than I would like, but we love the taste. Btw, the recipe calls for 8 large tomatoes so you use them up in a hurry. I haven't tried canning or freezing it. We eat it all in a couple of days.
 
1) Tomato slices with thinly sliced onion marinated in Italian dressing.

2) BLT

My solution for tomato overabundance is roasted tomato soup. Very tasty and it freezes well.
 
Sliced with mozzarella or burratta cheese and some basil.

There are only so many fresh tomatoes one can eat/use daily. Hubby has a small garden - not enough for canning/jarring. We actually buy two bushels every year (just made the sauce last week) for that purpose - except he puts the sauce in zip loc bags and freezes them. We have put it in mason jars too.

We use the frozen bags and supplement it with Redpak cans throughout the year. We would need to make at least 5 bushels if we did not want to buy cans during the year (not enough time to do this/my parents used to buy about 10 bushels a year).

This is what I would do if I had lot's of plants/tomatoes.
 
I have a recipe for a summer caprese “bread salad” that is delicious. I only have it on paper, but it is a hit at group gatherings.

We make this tomato soup and enjoy it all winter. It is delicious on it’s own, with grilled cheese sandwiches, and with some cheese tortellini tossed in.
 
I decided that it is easier to buy gallon cans of Centos diced tomatoes for about $4 a can than to grow , peel and cut them up for salsa or sauce. I do like a fresh tomato now and then. Wouldn't mind one right now.

Roast with garlic Etc and purée and put in freezer for winter pasta.

BLTs-could eat at least once a week in season.

Today I canned pizza sauce-last week it was diced tomatoes. Small batching canning, so I can do four pints on a lunch hour.

Bacon and tomato sandwiches. No lettuce. Perhaps a slice of cheese, but not necessary. Nothing better than a still warm from the garden tomato with at least a 1/4 lb of bacon between two slices of white bread!
 
Chili, Spaghetti Sauce, Turkey Sandwiches,
and Salads. This week: Raspberry & Walnut Salad.

I make a lot of pico de gallo. Good for much more than MX food. Pico de gallo omelet is wonderful. Add it to a green salad. Use it for bruschetta.

If we have extra salmon around the house I make spread salmon salad on some nice artisan bread, top it with sliced tomatoes and cheese, and put in the broiler.
 
I make gazpacho all summer long when the tomatoes are in season. Mmmm. Keep it chilled in the fridge for a refreshing lunch or side dish. I am also in the BLT camp. It's one of my favourite sandwiches. I particularly enjoy it on a toasted pumpernickel bagel.

Another summer favourite is a tomato and onion sandwich. Slices of tomato with an accompaniment of some sweet onion slices and a little mayo, basil, salt and pepper. It's delicious on very fresh bread, otherwise I toast the bread.
 
Stuff them with tuna salad or chicken salad. Super great lunch!

This is one use of a tomato that we haven't tried yet. What made you think of peanut butter ? Were you out of mayo ? I'm curious enough to try this but we are out of peanut butter and tomatoes but they are now on the grocery list.

Sweet million cherry tomatoes are good to eat right out of the garden. My kids still eat them out of a bucket and say they taste just like candy!
 
Tomato sandwiches, every day! Salt, pepper, Duke's mayo.
