What are your favorite meals when weather starts to cool in the fall?

We do the same food year round but do use what is in season so if you mentioned that I would get it. It is amazing that soup is more popular in the tropics than in cold countries.
 
When it gets cooler out, I love making chicken pot pie, coq au vin, Italian beef, vegetable soup, pulled pork, goulash, homemade pasta sauce(secret family recipe), creamy chicken served over lightly buttered orzo, banana bread, and lots of chocolate chip cookies.
 
Meatloaf and mashed potatoes. Scalloped potatoes with ham. Chili.
 
It's been surprisingly warm here, but once it cools I'll do my fall routine and make huge batches of soups—chicken noodle (with the Reames frozen noodles), pea, French onion and chicken tortilla—and freeze them in 1 or 2 serving containers to enjoy all winter. I also make a pork ragu sauce that freezes well, so I make enough for 4 meals and just need to add the pasta.

I've got a collection of wintery recipes that all use a few cups of chicken from one of the Costco hens, like enchilada style hotdishes, a baked Alfredo and a stove top one with asparagus and orzo. Of course, the old standards like pot roast and scalloped potatoes with ham.
 
It is too hot in Northern, CA, to use the oven in the summer, so when fall rolls around, using the oven is a treat. We like pastas, casseroles, soups, stews, beans and baked goods. I did bake bread about 2 weeks ago when it was 87º (cool for September where we are) but when the kitchen reached 90º in the afternoon, with the AC on, I regretted it! I will wait until mid-October for more baking.

Sourdough Dinner Rolls, Sourdough Cinnamon Loaf, and Sourdough Tortillas:

This has changed a lot since I was diagnosed with Diabetes Type 2. Have to watch the Carbs. Fewer potatoes or Home Made Sour Cherry Pies. My recipe comes from a Cook Book printed in the 1940's. I refused to eat store bought Cherry or Apple Pies - too sweet.

Yeah, I hear ya.

Life has gotten simpler since I lost weight and brought my A1c into the normal range (in control). I put a lot of fiber in with the starch/carbs to counteract the net carbs. I also use measurement (weighing and volume) to manage portion control. For homemade stews and soups, I have a spreadsheet where I put in the ingredients and divide by the number of servings to get the nutritional data. I measure out the whole batch, so I know the volume it made. I love the Pyrex 1, 2 and 4 cup storage bowls which make estimating the volume of the serving easy.
 
I make my annual large roasting pan of cabbage rolls.
My MIL used to make cabbage rolls. I never had them growing up, which is odd as my mom was 1/4 German/Polish (maybe my dad didn't like them :LOL: ), and I loved them.
 
We bought italian sausage at Costco yesterday. Costco hasn't had sausage for a while now. It used to be a regular purchase for us.

I plan to make sausage and peppers in the crockpot. I found a great recipe. Rick and my stepdad will enjoy with Spaghetti, I will have the peppers with a salad. No carbs for me, as I am pre-diabetic. I had leftover zuppa toscana last night. Shouldn't have.

The prognosticators say that today is our last 'warm' day for a while, so I rubbed a rack of baby back ribs and got 'em in the smoker. I have some cabbage soup and potato salad and fresh peaches on the grill for tonight.

Cindy, there is no dough involved, just ground beef, ground pork, onions , rice and roll it all up in cabbage leaves. I use tomato juice to bake them for several hours in the oven.
