Have not stayed there.
We did go to Isla de Mujeres on the ferry that is very near VDP.
There were many restaurants there ;and I would highly recommend it as a day trip.
We ate at an excellent Italian restaurant on Isla M.
- later I got a really good tamale for 20 pesos from a vendor at the bus stop nearest the ferry terminal , on the way back to our RCI exchange at Club Regina.
We stayed there about 8 years ago. We own timeshares at the Royal Sands in Cancun which is in the hotel zone. We always rent a car in Cancun and therefore we are very comfortable driving there. Villa del Palmar is in Punto Sam. It is directly across the water from Isla de Mujeres. It is really off of the beaten track. There were very few restaurants in the area at the time, but since we know Cancun so well we didn't mind driving to the ones we know in the hotel zone or even in downtown Cancun. ( you are closer to downtown than the hotel zone). Their beach was not very nice at the time and they didn't allow exchangers to use some of the amenities. The villa was ok.
It depends on your room sizze. One bed and up have a hammock. Studios have a table and chairs. There really wasn't much for restaurants in the area. The ferry to Isla Mujeres is next door to the resort and there are many restaurants in Isla. The resort has a bunch of restaurants and a Palmita mini market deli.
Would it be best to do the all inclusive plan - we usually only like to eat out dinner - What do the dinners cost there? Any restaurant recommendation?

You could do a minimum 3 day AI. Many people do AI their entire stay. The cost was about $90 a day the last time we were there. There really isn't anything but a taco stand at the ferry terminal in walking distance from the resort. For my wife and I dinner usually cost about $70 and included a cocktail. Here is the owners page for the resort linked below. There are 5 restaurants, a beach bar and a deli market for a total of 7 places to grab a bite.
