Looking for suggestions on where to stay at overnight
Best plan for spending the day at the Mall of America

Mall of America is located in Bloomington, Minnesota, 55425
at the crossroads of Interstate 494 and Highway 77,
five minutes from the Minneapolis/St. Paul International Airport &
15 minutes from the downtown areas of Minneapolis and St. Paul.

I went there the year it opened. Its HUGE. Have you been to their website yet? They used to have suggestions on hotels/motels nearby which had shuttles to the mall. Also you might want to study the mall maps to figure out everything you want to do...

MOA: Underwater Adventures Aquarium

Underwater Adventures Aquarium is located beneath the Mall of America.

5 minutes from the Mpls/St. Paul airport at the intersection of I-494 & Hwy 77, Bloomington, Minnesota. Free Parking near the East Entrance, Level One

listed Cambria Suites & Homewood Suite by Hilton $119
 
Check Waterpark of America that is in Radisson very near of MOA if you are traveling with children. Underwater Adventure is fun for all ages. The MOA is big, reserve all day.

I don't understand your comment about parking being free at the East Entrance Level One. All of the parking at the MOA is free. The closest entrance to the Aquarium is the East Entrance Level one.

You can take the Light Rail directly from the Airport to MOA.

Ordered a Minneapolis and St Paul Visitor Information Packet

Minneapolis and Saint Paul are both home to a unique system of
glass tunnels located one story above ground called Skyways.
Downtown Minneapolis' 8 mile system and downtown Saint Paul's 5
mile system will get you almost anywhere in climate controlled bliss.

Can anyone tell me more about the Glass Tunnel Skyways
 
The skyways are like enclosed heated bridges over the streets between buildings, so you can walk all over downtown and never go outside.
 
So, do people walk the loop for exercise? I'd be game for that.
 
Yes, it's common in the winter for downtown workers to don their sneakers and take a brisk walk around the skyway system during their lunch hour. You can go for blocks and make a circular trip through several buildings.

In most buildings, a variety of restaurants and shops have opened on the second floor, where the skyways run through the buildings, because it's so convenient for workers and shoppers to stop while they are walking through the skyways. These are usually open only during daytime hours on weekdays to serve the downtown workers in all the buildings.

I used to work downtown, and parking ramps connected to the skyways always charged a premium. It was great though, even in winter you could walk from your car to your office without having to go out in the cold and snow, and then do some shopping and lunch at noon without a coat.
 
I've stayed at Homewood Suites several times. Its across the street from MOA. Easy walk or take the shuttle.

Hotels and Light Rail

You have more than a few choices as MOA is located near the airport, I would imagine most hotels would have a shuttle to get you to MOA. Also from the airport and MOA there is the light rail which can get you in to downtown Minneapolis (not St Paul yet as the cities although called "Twins" are a few miles apart). In downtown you can then experience the skyways - weekdays much more fun with the business "traffic" in the skyways. Weekends are a little bit more quiet and some of the shops may have more limited hours. Even a Target store located downtown Minneapolis and connected via the skyways!!

The Casino is located in Prior Lake and is roughly 15 miles WSW of MOA

(Sorry we missed you at Orlando, we stopped by your villa but you were out at the time)
