Kauai Condo Cooking

We will be heading back to Kauai this fall and are looking to save money by eating at our condo more. We like to eat healthy and will get most of our food from Costco to feed the four of us. Does anyone have suggestions, meal plan, cook book, blog or any favourites suited for vacation cooking?
 
Since the quantities at Costco can be larger I try and cook meals that overlap. For example, we'll get the 9 layer mexican dip mix. We'll use it for appetizers one night and then, for lunch one day we'll make nachos with leftover fajita meat and the bean dip. Or I'll make grilled chicken to eat one night and then, use for ceasar Salad the next. I'll even do the same with grilled fish and then, in salad the next lunch. When we go in the late fall/winter we will buy the fixings for Thanksgiving turkey meal: turkey, mashed potoatoes, sweet potatoes, cranberry sauce, gravy, etc.. Cook it the first night and then, eat left overs the rest of the week. We like to make sandwich wraps where I'll put brie on the bottom of tortilla, then, add cranberry sauce, red onions, spinach, turkey and roll it up. We do this a lot at our non-Hawaii timeshares. In Hawaii, I tend to get fish every night to grill. I'll usually throw in one meat dish but use it for sandwiches, salads, etc... I have this marinate recipe I use for chicken that only takes 1 hour to marinate. So, it has limes, garlic, etc.. in it. It is really good and makes the chicken juicy. If you want the recipe I can post it. I buy all the stuff for marinates on the first day of our trip and prep everything and put in ziplock bags and put in the freezer for the rest of the week. I prep a lot of things before I go to bed at night. We also usually eat one pineapple a day in Hawaii as well.

3/4 cup fresh lime juice (about 6 limes)
6 garlic cloves, minced
2 tsp salt
2 tsp dried oregano
1 tsp ground cumin
1 bay leaf, crumbled
1 tsp ground pepper
8 pieces skinless boneless chicken breast (about 3 lbs)

Combine the lime juice through ground pepper. Pour marinate over chicken and marinate about 1 hour (not too much longer as the meat will get mushy from the limes).

Grill as usual.

This usually makes about 3 meals for us. The recipe can easily halved for smaller quanities.

I use the chicken in caesar salad, make enchildas with it, eat it grilled, use in sandwiches, etc.. I make this at home a lot.

On timeshare vacations, I premix the dry spices in a small tupperware container. I've had no problems traveling with it including in my carryon bag.
 
As far as dry things like spices, we bring them from home. Saves on buying a lot when you only need a little.

We shop Costco a lot too (on Oahu), and grill a lot as well. They often have sashimi of good quality! We like to get a big veggie platter to eat on and add to salads. Also we usually get a pack of their frozen sirloin burgers, so make hamburgers for the kids a couple of times. Then you can thaw a few out and crumble the ground beef for tacos (just pick up a taco kit at Target or wherever) for a quick meal.

We bring dry marinade mixes for fish, just add oil and liquid. We also bring our own sweetener for coffee; don't need a ton but we like our spenda. Also bring our own Tide Pods and dryer sheets, whatever is easy to pack and avoid buying there (I'm a couponer so have quite a bit at home anyway). Also we bring side dish mixes (flavored rices) and I portion out quinoa in a ziploc bag to bring (I cook it in broth).

Since we have a large group, this upcoming trip I'll see if Costco there has Yoshida Sauce - it's a really good terriyaki sauce - and get a large pack of chicken to make on the grill one night (we have 12 people going for part of the time, 7 for the rest, 3 separate condos though!).

Breakfast - we go through a lot of eggs (we like egg white omelets) so buy at Costco. I bring dry sausage gravy mix, and get biscuits at Target or Safeway. Add a bunch of fruit for a big breakfast.
