It’s time to pay my annual dues, and I wanted to see if anyone knew how the credit card charges are categorized for both American Express and Visa? Is the category a hotel, travel, lodging, miscellaneous fees, etc.? There’s so many different categories, I want to maximize my benefits, and see if it makes sense to use AMEX platinum, AMEX, gold, one of my Chase cards, Costco credit card, etc.

Amex is under Travel-Lodging. Visa is under travel. This is what is on my accounts.

Any doubt just charge $5 or so and see how it gets reported.

Not a popular choice for MFs with most, but I believe it falls under "Travel (other)" with Mastercard.

MFs did qualify for a special promo I got on "Travel" category purchases with one of my MC credit cards.

HVC: The Point at Poipu, 3 deeded weeks, 1 of which is in The Club.
My Chase Sapphire Reserve treats MF's as travel and earns 3x points.
Since Diamond got bought by Hilton, I use my Amex Hilton Surpass card for the MF's and it earns 12x in Hilton Honors points.

If you have any Marriott- branded card, you’ll want to use that, as you’ll get 6x points or whatever the card gives for Marriott hotel stays.

This decision can be driven by what you are using your points for and what your balances are. Chase points can be worth more than Marriott. Plus chase points can offer more redemption options. We got great value using chase points for apple products when they offered addition discounts. Here is a easy review https://thepointsguy.com/guide/which-credit-card-marriott-stays/amp/

+1 on this. It Also depends on promotions on some cards. I normally use Bonvoy card for MFs, but if I have a card that give me 10% back on "Travel" for 3 months up to $900 spend per month, I will use that first on flights, hotels, or MFs if it gets to that.
