read it's mid 70's day
and around 58-65 nights

Is it like Palm Desert/Palm Springs in the winter where the sun makes you feel hotter than the temp. is during the day?

That's about right; it is also arid and not only will the sun make make it seem warmer, the sun will burn you very quickly! Pack plenty of sun-screen. Evenings are very pleasant, but take a light wrap for when the sea breezes come in.

Cabo Nights

Yes, it is cool in the evenings but the days should be wonderful. We were there the second week in January and it was in the low 80's so I would expect it to be nice. It will probably have more cloudy days or partly cloudy than for example when we were there in November but still Cabo is wonderful anytime you go! :)
When we checked weather.com it said it would be cloudy all week but it was proven wrong as it was sunny and warm for the first 4 days. A light wrap in the evenings should be good.

Enjoy,
Judy

Yes, a lot. We just returned from Cabo two days ago, and the weather was around 82 day/60 at night every single day for a week. Beautiful. We've also been there in February and it could be warmer then. You are definitely fine during the day in a swimsuit & tee shirt, or just a swimsuit. Come about 4 pm you may want a sweatshirt.
