Stayed there five years ago. You don't need a car to get around the resort but not much else in walking distance. There is a benihaha restaurant next door but we drove to the Publix and the outlet center.

You will be fine, there. There is a restaurant/bar on site and next door at the hotel Lake EVE. Grills on site. You can Uber/Lift to the Publix up the street.

Needing a car really depends on what your plans are. If you plan to only stay on the grounds of the fountains then you will not need a car. If you plan to go other places you will need one. Of course Uber/Lyft are options, but there is so much to see and do in the area that a car just makes sense. Add up the price of uber/lyft and it probably comes close to rental car price. Renting a car maybe a few dollars more but for the convenience it may be worth it. Also the cost of meal options is a lot less expensive if you can drive to less costly restaurants. Goes the same for gift store shopping and being able to get to the MANY gift stores and shopping outlets which is a part of vacation. Buying DISNEY souvenirs in Walmart and Target is a HUGE savings. The overall savings achieved by having a car may be worth it.
