Under most States' Laws a letter is presumed delivered on the Date of Mailing. So long as you keep Proof of the Date you mailed it you should be ok.
I feel if the OP, can should the tracking status of his mail. They should be safe.
I also hope the OP, make a copy of all the documents and his rescinding letter to the timeshare developer. The OP, needs to keep all of their documentation for their proof to cancel the timeshare purchased.

From what I gather sending registered is probably overkill, but I'll probably go that route on Monday. It's basically the cost of a couple craft beers. Between email and even certified I'd hope that would be enough, but I'm not too trusting after this last experience. I'll be making a post office run at noon tomorrow!

If you have an email option, that is very effective and instant delivery. You should be able to follow that up with just USPS First Class with Certificate of Mailing. The Certificate of Mailing is a postmarked "receipt" that the postal worker at the Post Office will give you to keep. It provides the sending address, delivery address and they literally stamp it with a postmark that contains the date. The Certificate of Mailing is/was just $1.95 in addition to the stamp. You must be using an actual stamp. Not one of their printed or metered stamps.
