1 night stop over on the way to HI

Some airlines- Delta is the one I am familiar with from a previous experience- allow you to book multiple city tickets with several flight- I know at least 4 legs, I believe more.
I haven’t priced anything out in this case to see how the multi city vs one way single tickets would compare.
I’m long way from final plans, just still exploring.

I’ll also add that I’m not sure if that was what you were saying- not sure what you meant by stopover.
I don't think the issue in my mind would be multiple stops but over night and open jaw might be a bigger issue. I know that either American or Delta one had a major problem at one time with doing both. We had an overnight stay on an open jaw ticket one time where the overnight was simply due to flight delays and it was a major hassle.

We travel from visiting family on the east coast every year and the trip from NY to KOA doesn't require an overnight since we are leaving in the early am and arriving home in the early afternoon thanks to the 6 hour time difference. When we begin our travels to the east coast, we normally do a few days in either Northern or Southern California to visit with family before heading east. The west to east coast route is hard on us and we try and avoid red-eyes at all costs so getting to CA at a reasonable hour and staying at an airport hotel is our preference.
 
Last year we had flight that arrived around 11:00 AM at SFO. I rented a car and found the city very easy to get around. We booked the Ritz-Carlton Club using Abound points for one night, which allowed us to have free parking. We walked to Oracle ballpark for a Giants game in the afternoon. The next day we drove to Sausalito and had many options for lunch. We stopped by the Wharf and spent a few hours on our way back to the airport for a 6:30 flight to Kauai. I know you said you don't want to rent a car, but it was really simple and staying a night at the Ritz to start your vacation is tough to beat.
 
Regarding a Seattle layover, I have a personal hotel recommendation. We have stayed at Cedarbrook Lodge near SEA. They have an shuttle 24/7 from this unusual property. It was built as a forest timbered corporate retreat on 18 wooded acres, you would never guess they were such a short distance from SEATAC. The restaurant there has won numerous accolades as well. You can’t really walk anywhere, you would have to take a shuttle but this hotel is a real hidden gem. Highly recommended. Obviously not a Marriott though, if that is what you were specifically looking for.

Just my two cents:

If the flights work for you, Las Vegas is a good option. Pick your resort - they're mostly ALL right along the Strip, which is right next to the airport. Things are "affordable" compared to a big West Coast city, and getting around is an easy Uber or taxi ride. The airport itself is easy to navigate, and things tend to run pretty smoothly. Las Vegas airport processes a LOT of air passengers every year, and nobody gets too excited about anything. Easy breezy. Just be sure your outbound flight leaves in the morning. Sometimes connected flights can be delayed elsewhere before arriving in LV.

In this map clip, The Strip is the vertical gray line to the left of the airport, but closer than I-15 freeway. That's where virtually all the "named" resorts and hotels are.

We love the airport Marriott at SFO.
Great amenities and facility. If we have a rental car, we take it back the day before and life's easier.
 
Vegas there is the MVC. I like because you can get in and out easily.
Any of the major strip hotels if you want some fun. if you have status with Marriott, the MGM hotels are nice because you can use elite check in.
Cosmopolitan or Bellagio to start.
Good suggestion!

We live in the bay area, but frequently use the SFO Marriott for an overnight before early flights. Lots of good places to eat a short ride away. The hotel bar is not a bad place to eat either.

As mentioned above the Hyatt attached to the airport is the most convenient, but you will pay more for the easy access to the skytrain.
 
I'd pick based on flight schedules/costs. Every one of the airports that will have non-stop flights to the islands will have a reasonable quality airport hotel with dining options.

Us too. For us it's usually a night at SEA or PDX before flying to Hawaii or Mexico. We usually fly home with no stops.

We just flew to Hawaii and we were originally supposed to have a week long stay in Las Vegas then carry on. We had a change of plans and instead had to fly from Columbus, OH to Kauai in one day. We still stopped in Las Vegas with Southwest. It didn't seem as bad as some other trips we made where we connected in Denver or Chicago. With that, I don't think we would ever do a single night layover. Too much of a pain to get our luggage, then return to the airport the next day to fly out.. I would dread that. It is either just all in one day or a week long stay somewhere like Denver, California or Las Vegas.
 
Our favorite stop over city is San Diego. Our Hilton credit card gives points if we use it to pay the maintenance fees for our Hilton timeshare, so we use points to stay at the Harbor Island Hilton. Except for the airport noise, it's a very relaxing location and has an airport shuttle. One year we were going to use a bunch of points to stay at the Hotel del Coronado which is also a Hilton property, although an expensive one. Unfortunately, they moved up our arrival time on our flight to San Diego, and we wouldn't have arrived at the hotel until after dark. We canceled that hotel and stayed on Harbor Island like we usually do. Someday we'd really like to stay there. It's a classic.
