For a party of two, Hawaiian would be my choice since their Boeing 717 interisland fleet has a seating configuration with two seats on one side of the aisle and three on the other. So, for a party of 2, you can get a window and an aisle together on the two side. Southwest uses Boeing 737 equipment with a 3-3 config.
We flew on SW to Maui from Lihue a few years ago. There were about 20 people on the the plane. It was great. The flight time is ~45 min. I think that SW is fine, even if the plane is full.
For reference, we flew from OGG to LIH last Saturday on Hawaiian. Our flight was delayed 2.5 hours due to a mechanical issue. All that Hawaiian did was keep pushing back the departure time every 15 minutes. It was frustrating. At the end of the 2.5 hours they moved our gate and gave us a different plane. We had also lost the seats that we originally chose (window/aisle) because the flight that we originally booked was changed a few months ago. My husband got an aisle and I got the middle. Usually I love Hawaiian but the last two times that we have flown interisland have been problematic (last time it was a computer issue and that was a 6 hour delay with very little communication).
