What are your favorite Vitamix recipes?

I have a Vitamix, but I don't use it because I'm not a creative cook. Do any Tuggers have some favorite recipes that they could share? I'm interested in all options, soups, smoothies, etc.

Just bought a vitamix last week. We're making smoothies, but I'm interested in additional ideas too.

I mostly use mine for smoothies and I don't use recipes very often. I just toss in what I think will taste good and adjust to taste.

Soaked dates make a good sweetener. Soaking them makes them easier to blend. You can make a date puree and keep it in your fridge for other sweetening needs as well.

Avocado adds a rich creaminess to smoothies. Use a quarter to a half of an avocado. You most likely willl not taste it depending on what other ingredients you add.

Chunks of frozen fruit give smoothies a thicker consistency. I currently am enjoying mango. Love a mango lassi. I put cardamom in mine. Yummy.

Ice cubes will also give a thicker consistency if you don't have frozen fruit. I like the milkshake consistency of avocado and frozen fruit or ice.

I enjoy peanut butter, cocoa, and banana smoothies.
I enjoy cherry (I use dried cherries), cocoa, and almonds in a smoothie.

I've added kale and other greens if I have them them on hand. You can use beets in a chocolate smoothie and the kids won't tell the difference. Just call it "red velvet."

I use various milks (currently almond) to keep the mixture from freezing up while blending.

Cinnamon, nutmeg and other spices add interesting flavors.

I bump up the protein with plain greek yogurt.
 
There is a chocolate pudding recipe (you can google it) that uses dates, avocado and cocoa powder that is good and you'd never know there was avocado in it. I find I need to use less cocoa powder than the recipes call for so add less than the recipe states. You can always add more if you want.

I haven't used my Vitamix in a while. I have to correct this oversight.

What I used to do, and will do more regularly now, is to make a smoothie for breakfast. I keep frozen fruit (mango, blueberries, pineapple, strawberries) in the freezer. I put in some liquid juice, any type of fruit juice, then begin to add the smoothie stuff.

I throw in a frozen banana (I freeze bananas when they begin to turn color, keep the skins on in the freezer, then run under water to loosen the skin and throw one or one half into the Vitamix), then add some other frozen fruit. Then I add in greek no flavor yogurt.

My "secret" is to add a flavored, no calorie sweetener, such as Torani sugar free syrups. They have a great selection: peach, cherry, blueberry, watermelon, etc.

Turn it on and let it whirl.

Juice or some other liquid
Frozen fruit, you decide
Greek yogurt
Torani syrup.

Depending on my mood, I can throw in some spinach, kale or other healthy green stuff to make it a green smoothie.

Thinking about this reminds me to get on it tomorrow morning!
 
Like most people here, I use it mainly for making smoothy/ drinks. My current favorite one is mint strawberry lemonade:
Mint leaves (3-4 leaves per drink)
3-4 strawberry (fresh or frozen) per drink
Kirkland Organic Lemonnade from Costco
Raw agave nectar (can be found in both Costco or Whole Foods) to taste
Blend the above together. Garnish with fresh mint leaf.
I like to use fresh strawberries but frozen ones taste pretty good as well. Just a bit thicker. Very refreshing!
 
Resurrecting an old thread to see if any other tuggers have a vitamix or blender recipes. My favorite breakfast smoothie is kale/spinach mix with a half a banana, one organic apple and a teaspoon of Amla (powerful antioxidant) a little water and ice. I learned about Amla when I went to a 3 day plant immersion weekend in Cleveland.
 
My favorite smoothie is half the vita mix filled with frozen blueberries, 1 banana, some frozen peaches or mangoes, sometimes both and coconut water. I usually toss in two packs of stevia. While I'm mixing it up I will top it off with more coconut water so I end up with about two quarts.

My next favorite is fresh pineapple , oranges, kiwis in about equal parts and one banana. I use about two cups of ice , two packs of stevia and add water or ice to make two quarts.

If I get bored I head to the blender babes site for other ideas. This is where we bought our vitamix a couple years back.

I did make a dip that was a few boiled peeled potatoes maybe four cups total, a couple of cloves of garlic and a decent sized onion. It tastes like a really creamy onion dip. I tried to make the tomato soup that was in the vitamix recipe book but didn't really like it enough to make it again.

For smoothies, with protein powder as a meal replacement. I also use frozen apples for sweetness. But I actually freeze my Kale and Spinach too. That way it does not go bad, and it blends up really easy frozen. And they all freeze really well.

Sandy, great idea about freezing the spinach and kale :thumbup: I do inevitably have to throw some away every so often cuz it goes bad.

So if you eat it both raw and in the blender, keep it raw until just before it starts to wilt. When it starts to go, then put it in the freezer.
 
Almost every morning my husband and I have a smoothie usually with the following:

Carrots
Spinach
Pineapple
Green Apple
Banana
Add a little water

I go with fresh vegetables and fruits most of the time. But, if something is going to go bad before we use it I freeze it and use it frozen for smoothies. Carrots, spinach, pineapple and bananas freeze well. I use other fruits and vegetables at times (strawberries, broccoli, etc.). This is an easy way to get in 2 servings of fruits and 2 servings of vegetables every day.
 
Fresh strawberries and vital proteins collagen peptides. Great low calorie protein meal with no after taste. Also oranges with spinach and vital proteins collagen peptides.
 
The goofy looking guy with the bow ties on America's Test Kitchen apparently likes the Vitamix to quickly aerate red wine. :D

Baba ganoush! My family has a thing about the "texture" of foods, so I make baba ganoush in the Vitamix and it comes out creamy smooth - and delicious! It's a staple in our house. I use this recipe from Food.com - http://www.food.com/recipe/baba-ganoush-the-best-in-the-world-67570 (except I roast the eggplant on a parchment lined baking sheet to keep prep and clean up to a minimum).
