Spices for roasting a chicken

Several restaurants in my area do a great job on roasted chicken -love the spices they use. I have tried several of Penzy's mixes and a few of my own, but can't seem to equal any of the ones I like.
Would anyone care to offer a suggestion?

I personally use Johnnny's seasoning salt and McCormick's mesquite for chicken. If I'm in the mood I'll throw in some rosemary for giggles. I use these spices whether bbq-ing or roasting. Bon appetite!
 
I take fresh herbs, rosemary sprigs, sage, dill, marjoram, thyme, (all snipped to release the flavor) garlic, onions, Spice Bouquet roasted chicken blend, Greek seasoning and stick it underneat all the skin and inside the chicken. I rub the chicken down with mayo for a beautiful golden chicken. Tender and delicous.:)

I mix melted butter/margarine with a little salt & pepper, then add equal amounts of rosemare, thyme, marjoram, basil and oregano, then brush the mixture onto the chicken before roasting. I also put some of the mixture in the cavity of the chicken along with garlic and a bay leaf.
 
This is the grandaddy of all chicken recipes.

* 1 egg
* 1 cup vegetable oil
* 2 cups cider vinegar
* 3 tablespoons salt
* 1 tablespoon poultry seasoning
* 1 teaspoon ground black pepper


Crack the egg into a medium bowl and whisk until beaten. Slowly whisk in the oil until fully blended. Then whisk in the vinegar, salt, poultry seasoning, and ground black pepper. Set some of the sauce aside to use for basting while grilling. Place chicken in shallow baking dish, and coat with sauce. Cover, and marinate in the refrigerator for 24 hours.

You can either grill or roast the chicken, whole or in pieces. If you are roasting the chicken whole, then wash the chicken thoroughly inside and out and brush the marinade inside and out before grilling.
