Yes, you can deposit and request any other Marriott resort. If you include any non Marriott or Vistana properties, you will be charged the full exchange fee. You can certainly place a request for a larger unit side, but there will be a unit size upgrade fee if it confirms outside of 59 days from check in.

For my 50th anniversary (June 2020) I exchanged a 1 BR Marriott Palm Desert and reserved a 2 BR at Frenchman's cove. So, although only a single data point, I think that it is easy-enough to exchange into. We ended up cancelling because of Covid.

Perhaps others can opine, or perhaps a call to the resort would help, but I wonder how how many 3 BR units they have at Frenchman's cove? I read that they are only on the top floors. As a suggestion, you may want to consider requesting both a 2 BR and a 3 BR.

As noted, you can make that request. Just realize that every restriction you place reduces your chances of getting the exchange. If the resorts 3 BR were lock offs that would dramatically reduce the chance of success. The Platinum vs Gold season has no meaning in what you can do or your chances of success other than the relative demand of the exact week deposited and requested. Just make sure you get the best week possible at NCV and request 12-13 month out if possible.
