Looking for an easy, low fat tuna cassarole recipe

Doesn't have to be tuna, but I need to be able to make it ahead and then warm it in the microwave when we get home with friends after a perfomance.

I like Tuna Helper. Spice it up with frozen peas. Can you tell I'm from MN? :)
 
Now, that is what I really call easy! Have never tried it, but that would fit the bill. What does the MN remark mean? Clearly I am missing some cultural understanding.

Yes, a very sophisticated culture indeed. We are known for the "hotdish". I use tuna helper very often. I also mix it up a bit with the addition of other veggies. Sometimes I replace the tuna with the catch of the day or hunt of the season- most often pheasant, goose, whatever's in the freezer.

I suppose I've grossed out enough tuggers who aren't into wild game. Be advised for the next time you attend one of our potlucks, for which we are also infamous. :rofl:

Well, I just had to look in my mother-in-law's Lutheran church cookbook from central Minnesota -- they have a whole chapter on Hot Dish.

Here are a couple of easy recipes -

Tuna Hot Dish

3/4 c brown rice
4 pieces of celery (diced)
1 can mushroom soup
3/4 can of milk
1 large can tuna
1/2 cup onion

Mix all together. Beat 3 eggs. Mix in last and bake at 325 degrees for 1 hour.

Chow Mein Hot Dish

Brown:
1 lb hamburger
1 onion

Add:
3/4 c uncooked rice
1 can mushroom soup
2 cans water
1/4 c soy sauce
1 stalk celery

Bake 1-1/2 hrs in covered baking dish in 325 degree oven.

Noodle Hot Dish

Fry 1 lb hamburger with onion and celery
Add:
1 can mushroom soup
1 can tomato soup
3/4 can water

Cook until soup is blended and heated thoroughly. Then mix in 1 pkg of noodles. Put in casserole and bake about 1-1/2 hrs at 350 degrees.
 
You have tripled my understanding of the MN Hot Dish. These fit my cooking style to a T. Thanks much.

I suspect that it is 3/4 c uncooked brown rice.

I must confess that I've not tried these recipes -- but the source is authentic (central MN Lutheran - it's gotta be close to Lake Wobegan!)
