Kitchen shut down - looking for one-dish skillet recipes

As I mentioned in another thread, I am having my kitchen cabinets refinished, and we have reached the disaster stage! I have all the usual appliances to substitute for the oven, stove, and microwave, and I bought an electric skillet. I'd love to have some new one-dish skillet recipes, if you have any favorites. Here is the original kitchen and the current condition.

Thank you - We are painting the cabinets white, actually cream color - "Swiss Coffee."
 
The New York Times has a lot of one pan skillet and sheet pan oven (the latter won't work here but are great) recipes. They are reliable and most are 5* with a few 4* sprinkled in. I can't tell if this is behind a paywall but if you can see a recipe you like I can send I t.

I suggest asking your favorite AI for a few options. You might be amazed at what it suggests - and you can ask it to customize any based on your personal preferences, too.

They publish a lot of really great recipes on a very regular basis and if you get their newsletter (sign up for Cooking from The New York Times newsletter) right to your inbox.

They have a feature for subscribers (and can be done separately without a NYT subscription - NYT Cooking subscription) that is fabulous: Recipe Box. When you find a recipe you like you save it to your personal Recipe Box and you can categorize and search the ones you were interested in to find later. Extremely useful and handy. I use mine a lot.
 
I remember years ago while living in Roseburg, Oregon some friends were remodeling their House. 1 bathroom at a time, 1 bedroom, etc. So everything was done except the Kitchen. It was scheduled to start on a Monday. So on Friday they called the Contractor to make sure the Cabinents would arrive on Monday. They were assured that the Contractor has checked with the Manufacture and every was on schedule. So that weekend they Demolished their Kitchen and hauled everything to the dump. Monday morning the Contractor called and said ooops. The Manufacturer had looked at the wrong File and their Cabinents were still a few weeks out. They backed their 25 foot trailer up so the door was by the Front Door of the House. Mom would cook in the Trailer and run the food into the Diningroom. They were not happy.

Whenever you are having remodeling done and the Contractor gives you a time line. Ask ask if they are talking about "Contractor Days" or normal people days. When we had a remodeling done on our prior house the Contractor estimated 9 weeks. After 18 weeks we threw them out of the House as Thanksgiving and Christmas were approaching. We told them to come back after the New Year.

I have made quite a few meals in a hotel rooms equipped with just a small fridge and a microwave plus an electric skillet (along with an electric kettle) I brought from home . One of DH's favorite dinners is to brown pork chops or chicken breasts in the skillet, add some diced onions ,and even sliced mushrooms if you want, and cook until tender. Stir in a can of cream of mushroom (or chicken) soup, 1/2 can of water and some minute rice. Stir the soup well so all the rice is coated & the soup is mixed well with the water. You can add garlic powder, pepper and salt if you want. Put the lid on and cook until the meat & rice is done. Stir occasionally to make sure the rice is not absorbing all the liquid, add more if necessary. I cook frozen vegies in my silicone microwave steamer to go with it.

Another meal I make when camping, in a hotel room or even at home is one our oldest DS invented for a Scouts camping weekend about 30 years ago. Brown a pound of ground beef (can use ground chicken or turkey if you prefer) and when it is about 3/4s done add in a diced onion and diced red or orange pepper and stir while they cook. Drain fat off if necessary. When the the meat is done the onions and peppers should be tender. Take a package of Taco Seasoning (we like Old El Paso) and add it and the amount of water specified on the package into the pan. Also add in a small can of tomato paste pre-mixed with 1-2 (or more?) cans of water, or a can of tomato sauce. Stir everything together and you can either add minute rice or if you prefer brown or long cooking rice, cook it separately then add the cooked rice to the mixture and stir well. If cooking the rice in the mixture you will need more liquid than if you are cooking the rice on its own as the rice will absorb it as it cooks. I make a salad or buy a bagged salad to go with it.

Our DiL cooked for almost 3 months in a temporary kitchen our DS set up in their dining room when he tore out the kitchen to the studs and floor joists of their century home and built an all new modern kitchen. DS built a temporary counter with a sink that he connected through the wall to the plumbing from the sink area in the kitchen. They had hot and cold water and the old sink with the drain connected. For appliances they moved the fridge into the new kitchen area and on some of the old cupboards and counter was a microwave, Ninja flip airfryer, rice cooker and an electric skillet. The only thing she really missed was a dishwasher. She had storage in a few old cupboards and a shelving unit for extra space.

When we remodeled our kitchen, we moved the fridge and microwave to the dining room and used the utility sink in the laundry room.

We likewise learned about "contractor time," as our project took 3x the original estimate. There were plausible excuses (illness, family emergencies, etc.), but at one point, the project manager skipped town with some of the contractor's $$. It seemed like we were in a British comedy show.
