Kikkoman Finally Settles the Debate: This Is Where You Should Store Your Soy Sauce

According to Kikkoman :

"Whether you're enjoying Kikkoman Soy Sauce from a packet or bottle, it's best to store opened soy sauce in the refrigerator to help the flavor and quality remain at their peak for a longer period, and to prevent color deterioration."

And from FoodSafety.gov:

Refrigeration can be an important factor in the storage process to extend the life and quality of the product. This includes the color, flavor and texture of food items. The guidelines at FoodSafety.gov state that shelf-stable products like mustard, mayo, barbecue sauce, ketchup, soy sauce, teriyaki sauce, Worcestershire sauce and salsa will benefit from being stored in the fridge. "Refrigeration ensures that commercial sauces and condiments stay fresh for a longer period of time."
 
Growing up in Hawaii, soy sauce (we called it shoyu) was a staple, and most people had it in the fridge when not in use. The real debate was whether you preferred Kikkoman or Aloha shoyu.

Mayo has eggs and I would not hold at room temp for long. Salsa will ferment, even in the refrigerator and will mold.

Soy sauce no, ketchup yes. Probably we should toss our soy sauce; with dining at the OFH I’ll never make delicious Weight Watchers orange chicken again (diet orange pop, soy sauce, crushed garlic, ginger, and I add a couple dashes of Tabasco sauce (also stored above the stove with the soy sauce)).
 
Mom use to buy rice and soy sauce in large tin containers. The soy sauce was probably a gallon tin and was always in the cabinet. Now days at our house, the soy sauce is in a plastic 1/2 gallon container in our pantry and poured into a small soy sauce container that is kept in the fridge. We like Kikoman.

I need to toss my soy sauce. I always purchase kikkoman because my daughter in laws parents handle kikkomans trucking and warehousing
