Gifting HGVC stay w open dates

Hello, we have a family friend getting married this summer and we would like to gift them a week at one of the HGVC resort

1) Can this be done?

2) If yes, how can we leave it open so they can confirm dates of travel when they want? and if not how difficult/easy will be for them to change the date and at what cost?

You can only make a reservation, then get them a guest certificate through guest services so they can use it. You have to use points, unless you are going to be there when they check in. Cash, open season, is for members only.
If you make a Club Season reservation online, you can change it for free. Keep in mind, it is space available, and you have to get another guest certificate if you change it. If they come along and want a week in Hawaii, for 6 weeks from now, you may not be able to get it for them.
IMHO, it would be best to tell them about the gift, give them the book to look at, and ask when and where they would like to go, then try to make the reservation.
 
Yes, make your own "gift certificate" to give to them, which could be fun and personalized. Last Xmas, I wanted to give a friend of mine a plane ticket to Japan using my UA Mileage Plus miles.

We haven't planned the trip yet, so to let her know I just went into Word (or MS Office, or any word processor) and made up a fancy looking "Gift Certificate" with her name on it, explaining what I was giving her ("This certificate entitles "name" to one roundtrip ticket to any destination... etc."). She loved it! It's highly personalized and shows a lot of thought went into it.

Just let them know after they recieve it to let you know dates and you will make any reservation required. And if any changes are needed, just to let you know and you will take care of it. Be sure to let them know about cancellation/change rules so they can plan accordingly.
