Day Trips from Vilamoura, Portugal

Somehow we were able to recently scoop 4 days at this resort. So quickly putting together a trip to Portugal starting in Porto and making our way south. For those that have been to Vilamoura, where would you suggest for day trips from Vilamoura (within 3-hours) assuming we have a rental car. Any suggestions for restaurants would also be helpful. Thank you.

Sevilla is 2 hours from Vilamoura and we'll worth the trip ...but it's a bit long roundtrip to call it a day trip (although we've done it as a day trip a few times.

Lagos and Portmao to the west are the next biggest citiew with some nice local sights. Sagres is also worth the jaunt for quieter unspoilt beaches.

Lisbon is also technically within that 3 hour window (about 2.5 hours on the toll road) but assume you'll be hitting that up before making your way down to Vilamoura. Considering taking a bit of the Coastal route down and hitting Sines.
 
Thank you. We are starting in Porto to Coimra to Lisbon to Vilamoura to Evora back to Lisbon for departure. Have been to Seville and Costa del Sol but first trip to Portugal. Will look at Lagos, Portmao and Sagres. When you were at Vilamoura where did you eat. We are staying four nights there. Again, thanks.
