Cooking Tomatoe sauce question

The past couple of years I have been using garden tomatoes to cook sauce but every now & then the sauce has that acid taste. My mom use to put a carrot into the sauce which she said absorbed the acid in the sauce.

Does anyone have any suggestions? Thanks

Use a little sugur. Start small and taste. Add as needed. This will take that taste away.

Some people add a bit of sugar or you can try a pinch baking soda.

my inlaws are all italian -- they always put a bit of sugar in their sauce.

The carrot doesn't absorb the acid, it adds a little bit of sweetness. When using fresh tomatoes, I usually do the pinch of sugar, too. Bobcat has it right, start small.

Our recipe for tomato sauce has been passed thru the generations originating in Italy. The one "secret" ingredient that works like a charm in removing acidity is RAISENS. You don't even need to remove them at completion.

Another way to add a bit of sweetness to a rich tomato sauce is to add a cup (like you would drink from) of coffee beverage. It will also counter a slightly acidic sauce. Courtesy of northern Italian grandparents, give it a try.
