What are your favorite meals when weather starts to cool in the fall?

It's cooling down to the 40's at night in the Denver area, which is perfect for sleeping. Our AC never reaches to the upstairs during the hottest months of summer, and our bedroom is often 80+ degrees at night, even at 10 PM.

Rick made Zuppa Toscana last night, and it was excellent, and my stepdad (91) eats it with vigor and lots of slurping sounds. (He cannot hear all of the noise he makes.) Rick made enough for two nights. Glad to eat it again tonight before church.

Anyway, tomorrow night we will have pot roast in the crockpot. My favorite. I do that one because it's so easy. Family will enjoy that with us, I am sure. I have yet to invite them.

We also have beef burritos often in the fall with Santiago's chili, which you can buy in the local frozen foods section of WalMart for about $9 a quart, and it's the best. Why cook your own, when this is so simple? Rick likes to cook chili, and sometimes it's great, something it's meh. Depends on the chiles, somewhat, but it's also about how much cumin and garlic he puts in. Not sure why it's not really consistently good.

Meatloaf is something I love too. The kids never liked it, but Rick and I enjoy it, so now we can have it whenever we want, and heating the oven in summer is something we just won't do.
 
Beef stew, beef stroganoff, chicken pot pie, chicken and dumplings and any kind of cobbler… preferably warm with ice cream ❤️
Rick loved chicken and dumplings at The Denver Drumstick when we were first married. They had a deal on a specific weekday, super cheap for all he could eat. At 18, 19, 20 years of age, he could put away several bowls full. Now he wouldn't be able to do that at all, and the restaurant closed about 40 years ago. Too bad because it was good. Great fried chicken. Casa Bonita is in the shopping center where this Denver Drumstick used to be.

We were wondering what to do for dinner last night, as we were walking through Costco with our shopping cart. I looked in our cart and saw potatoes, onions, italian sausage, bacon and heavy cream. I told him, "You have all of the makings of Zuppa Toscana in that cart." It was pouring rain, and it was 51 degrees and a very cold rain, so we decided not to stop at the grocery store for kale. It was still very good. Kale just adds color and a little crunch, as long as you don't leave it in water and cream too long.

Rick does it all in the food processor. He slices the potatoes, chops the cooked italian sausage and bacon, and cuts the onion, all in that old Cuisinart we bought at Costco many years ago.
 
Fresh gumbo or Lobster Bisque
Not my thing. I could maybe get a taste for Lobster Bisque. Rick loves Gumbo.

I love the chicken enchilada soup at Chili's but my copycat recipe didn't turn out very good. I was so disappointed.

Use velvetta… sounds gross but it works if you want the chilis version of enchilada soup

shrimp stew
chicken and dumplings
smothered pork chops
Grilled cheese with tomato soup

Adding buffalo wings, because they go with football. But we make them year round.

I'm sure there are others that I'm missing. All pretty good in cooler weather.

I love grilled cheese and tomato soup. Add a little ham to the grilled cheese, and it's even better. Clam chowder is a favorite around here as well, but we cannot make it without making an alternative meal because my stepdad will not eat any fish, nor will he eat chicken.

We make that often. We went on a soup kick last year and that was high in the rotation.

Me too. I figured out a copycat for the crockpot by combining a couple recipes; it was good but not quite like Chili's even though most of the comments said it tasted the same. I need to try it again but not sure I can duplicate what I did before.
 
Shepherds pie. Our favorite "comfort food" easy to make and even our picky eater loves it!
 
I have what I call my "Fall Harvest" meal, more based on the timing than the food. A local meat market sells Black Forest brats (smokey black pepper) and I will fry some pirogies in butter with chopped onions, and heat up some sauerkraut. My wife has no interest in this meal, so it's usually when she's got plans out. I did buy some Octoberfest last night which pairs with it quite well.
 
We had a couple of cool-ish nights, so I performed chile verde enchiladas. And all this talk of fall comfort foods prompted be to start a slow-cooker of cabbage soup to accompany some leftover grilled chicken thighs. Another favorite is a pot roast. The slow cooker gets a workout in cool weather.
 
We don't have any cold evenings anymore but we still get a craving for Chili and Beef Stew. Beef Stew is common year round here so we mostly make chili.🤙🏻
