I can never remember to plan ahead and let the butter sit to soften! I'm not sure I'd mess with the pounds the butter method the writer liked best, but I might consider the grating. I've been unsuccessful with the microwave soooo many times.

When I know that I am going to bake something that needs soft butter, I just take it out of the refrigerator when I get up and make coffee because it takes a while to have 2-3 cups of coffee while checking email, TUG, Facebook, getting showered and dressed. By then, it is ready to go! :) If I forget to do it then, I just put it on the counter and go back to my computer and check this and that - then it is ready!

Does anyone have a butter bell? I love mine.
Yep. We use them in both houses. But to load the bell right out of the fridge is impossible, so if I don't have time to let it sit out for an hour or two, I microwave it 7 seconds, turn it over, give it 7 more, check it, and sometimes give it a few more seconds. That does the trick. It's better with the short stubby quarters than the long skinny ones.

And while I'm on the subject of butter, this new Kroger butter (in the yellow carton) is crap! The water squeezes out of it and the butter falls out of the bell. Land O' Lakes or Challenge stays put.

Yes - we use that for everyday, but not for baking. It does not work as well as the room temp sticks.
