Walks of Italy tours/cooking classes

Hi,
This month I will be taking my second trip to Italy staying a week in Rome. I was there before, but for only two days. I already seen the coliseum and Vatican Museum. This trip we have the Scavi tour already booked. I was looking at the walk of Italy Tuscany trip from Rome. It ventures to Pienza, Val d’Orcia and Montalcino. The tour is a little pricey at $180 but includes lunch at a farm, tour of a castle and wine tastings. I heard good things about this tour company and wanted to check if anyone has some insight on this tour.

Anyone have recommendations in Rome for a cooking class? There is an abundance to choose from and would like to hear some recommendations. Being Italian I would love to learn to make my own pasta.

By the way, staying at the Grand Flora. I was able to get the 1 bedroom suite for 200k Marriott points for 5 days.

We used a private driver/guide, Rome in Italy, http://www.romeinlimo.com when in all Italy ports during a cruise. They were fabulous and would arrange anything we wished to do within our short time line. Pricey but when shared with another couple, not so much and well worth it.

4 - 6 people sharing a private guide and driver is the sweet spot. It permits a far superior experience than a bus tour where you are herded around, are stuck visiting the tour company's captive souvenir shops, and lose a lot of time due to the need to accommodate the slowest traveler in the group.
