The best pastrami in NYC doesn't come from a deli anymore

I always thought that the difference between corned beef and pastrami was the pastrami was smoked, brined beef...typically brisket but sometimes round?

The main difference between corned beef and pastrami is the way they're cut and
processed. Plus, after cutting and curing, corned beef is boiled, whereas pastrami is smoked
and steamed.

Corned beef does not have to be boiled. We always steamed them -- often right alongside the pastrami after it's been smoked.
