Storing dried beans.

I usually buy beans when I need them, but I had a hankering for some Minestrone soup and all the navy beans are sold out. I went online and bought 10 pounds of cannelloni beans. I had seen some complaints of mold/mildew. Fortunately, these look great, but I would like to keep them that way.

This is going to take me a while to go through. I'm going to fill a couple of quart mason jars and put them in the pantry for immediate use.

Any thoughts on the best way to store the remaining lot. (yes, I know, keep them dry) Sealed/Unsealed?

As long as they are kept dry they'll last a long time. It prolly says on the package, 'keep in a cool, dark place'. 10 lbs isn't that much. Eat a pound every couple weeks and you'll be fine. A LOT of dry beans are grown around here, and the warehouses are just big concrete floored, steel buildings, not climatized in any way. The beans are just in 2,000 lb bins, not even covered, stacked to the ceiling.

I keep them in the bags I buy them in inside the pantry.They last a very long time.

We vacuum seal some if we are planning on storing them for years. Some go into mason jars which are filled and heated in the oven to seal. Others are in the original sacks ready to eat. I think we have maybe 20 quarts of ready to eat pressure canned beans in the pantry.
