We have 2 unlocked GSM cell phones (basic models, no smart stuff) that we will be taking with us to Spain. We would like to pick up 2 inexpensive, prepaid SIM cards for these phones that would be good for a month (more than a month might be good, too).

Does anyone have recommendations?

We did get 1 Vodafone SIM last year, but when I got to their store, they made me spend 5 euros more than I was expecting, and then someone (Vodafone?) kept sending us text messages that I'm guessing were eating up our minutes. I would like to be able to ban incoming text messages, if that is possible.

I've ordered my spanish vodaphone SIM card on ebay from a seller named www-simcardspain-es - I would use it again.

I wouldn't worry about incoming text messages - there are no charges in Europe for incoming messages, or for calls (unless when roaming in another country)
