One of the benefits listed is Ritz Carlton Hotel Stays with Vacation Club points?
Anyone every done it or know where to get information on it?

You mean the Ritz timeshare stays? They are all listed on mvci.com under destinations. There is something like 5 of them. You can book them if you have the right minimum ownership levels. Points charts on on mvci.com

When I've looked at this program it's usually a bad deal to use points versus the hotel rate but for Ritz Carltons that might not be true.

Check the link BigMac gave you. It shows some Ritz Carlton hotels that you can book with DC points that are different from the Ritz Carlton club locations list with the MVC resorts for regular DC points bookings.
I think that would meet the benefit claim.
