I can still see some with a stronger week 1 br, but can't see any with a weaker week 1 br. What is the week you're searching with?

Its possible that your resort had its trading power adjusted. Interval has semi-annual quality reviews where trading power can be adjusted up or down.
If you know a two bedroom is available and you have pulled them in the past, this might be what has happened.

Are you certain that the 2BRs are actually there? When I'm looking online, they show up in the early morning and often, within a short time, they disappear, though the rest of the sightings remain further into the day. It's rare for me to see 2BRs later in the day. People confirm them, then cancel within 24 hrs.
I just got my II account set up with Wyndham points. I noticed that I can only see DVC two bedrooms with 3 bedroom deposit and DVC one bedroom with 2 bedroom deposit.

That is because the trading power of your same size unit isnt great enough to pull the same size DVC unit.

The Wyndham "1-size downgrade" has been reported in the past for DVC.

I spoke with my home resort. They are unaware of any changes made to our exchanging power. They said it should not be a problem to change into DVC 2bdr. I have called II multiple times with no resolve. One rep did seem to understand my situation. She checked all II inventory but at that time there were no 2bdr available. She suggested I call back when I believe there are 2bdr available. I got her extension but she is never available. Is there someone at II I can speak with who can check all II inventory, not using my units because they are obviously not working? Is there someone to speak with who can tell me if I should be seeing these 2bdr units? If I request a 2bdr DVC and suddenly my unit is not strong enough will the system reject the request? Any help with this would be greatly appreciated.

There are at least three right now---two at Saratoga in Flexchange, and one at OKW farther out.
If you can no longer see them, then I'm afraid you can just no longer see them. There isn't anything much you can do about it, except call when you see a sighting. RCI VCs can sometimes override small differences in trade power. II reps may or may not be able to do the same thing.
The resort won't have any idea, and of course every resort believes that their units should be able to get you anything anywhere.
If you put in an "impossible" request, it won't be rejected, but it also won't ever be satisfied. But, if II adjusts trade power frequently due to changes in supply/demand, *and* the gap between what you have and what you need is small, you might get lucky.
