I got to help with roasting the pig for our WaveCrest Condo Luau. I put in over an hour of turning to help it cook evenly. I learned that this is a more Phillipino style way to roast the pig.
This pig is 70 pounds and is only seasoned in the cavity with salt and pepper and then stuffed with Lemongrass. It was started at 11:30am and will be done at about 4pm.
I had to take Kim to one of her Ukulele sessions so we will miss it coming off the spit but I will have some other pictures and video of the dancers and music we will be having.
