How strenuous? Lots of great trails on Kauai, probably something for everyone. The Koolau Trail on Oahu is incredible, but in December might be a bit of a muddy mess. Some nice hikes on Maui and the Big Island, too, but weather and where on the island might make a difference. December can be very wet in Hawaii. This book might give you some ideas: https://www.amazon.com/Hiking-Hawaiian-Islands-Greatest-Adventures/dp/0762743476
I know the Koolau Trail on Oahu has some very tough parts. You can get to it in several places, so maybe hike different parts of it each day? Hope the book gives you some ideas.
