Nice recipe, but I would use icing sugar to taste instead.
The quality of Chantilly cream relies on a perfect, accurate whisking and if you do it too much, then it can turn the cream to butter!

I make this. I use electric beaters. My mom taught me to put stainless steel bowl and beaters in fridge first. She used powdered sugar.

I made it several times while SIP with DD. We’re backing off sugar. I used Julian’s Bakery Pure Monk fruit to sweeten. For a cup of heavy whipping cream it only took about 1/16th tsp. You could add enough to taste. Sometimes I’ve used 1/32 tsp of stevia (Trim Healthy Mama is my favorite brand).

Serve over warmed fruit for easy dessert.
