Food intolerance- Gluten and preservatives

Hello,
I am gluten intolerant and most preservatives bother me. I am looking for restaurant tips for my travels. I actually have pretty many in Las Vegas, but always looking for more..especially on the strip. I am looking for restaurants that have a gluten free menu or use fresh, not processed ingredients. I can order appropriately.
I am also going to Sedona..have 3 restaurants there already and Branson..pickings are slim. Will also be in Hot Springs, Ar and Niagra on the Lake, Ontario...near Niagra Falls. Then Orlando in June.

I love to eat out and luckily I am not celiac, but I do best avoiding gluten and preservatives so my stomach will not get upset.
Any other Tuggers with food allergies or intolerances that can share their restaurant finds?:ponder:

There is a Chipolte Mexican Food restaurant on The Strip just north of Harrahs. I don't know if they have G-free tortillas, but they do have salads that are like burritos without the tortilla. You also choose what goes in the salad, and everything is fresh and freshly made, so that probably would fit your description.

For Orlando, the best for any food issues are the disney restaurants. The chef will come and talk to you and you get the freshest food and they are very careful. Disney is expensive but for us safety is the most important and if we get sick then whatever we spend is too much!!
Outback has a gluten free menu and most very upscale restaurants now are good.
If you google celiac and the town that you want there is usually a good list of places to eat.
We have multiple food issues and so mostly cook in our villas but by checking online we usually find something good. We had a nice dinner in Williamsburg in March
