I made an olive oil cake the other day bc we have a limited supply of butter. It was pretty good. I'm thinking I could use any neutral-flavored oil and pretty much any flavoring.

This is a wonderful recipe! I used to make it as a kid. A dear friend made it for me this year for my birthday. It was always a favorite of his, one his mother used to make.

I made one of these today. . .almost. While it's on the counter cooling I was preparing the rest of the dinner. It dawned on me I don't think I added the cocoa. The batter was still so delicious that DD said "you sure you want to bake that?" I used 1/3 C maple syrup and 1/2 C sugar instead of 1 C sugar. I added the cup of coffee. Will let you know the verdict after dinner.

Edited to say the cake was a hit. Yes I forgot the cocoa so it tasted like a spice cake. I dusted it with powdered sugar. DD had bought no sugar fig preserves this morning. That’s what I put on my piece. Very French B & B.
