To prevent dryness you could poach it.
Cut it into serving sizes, then in a large frying pan put some water and white wine (if you like), or lemon slices and some herbs (dill, parsley or herbes de provence), being water to a boil, add in salmon pieces and cook at a simmer for about 3 - 4 minutes, depending on the thickness of the salmon.
Another way is to make a marinade of:
soya sauce
lemon juice
some garlic (or not)
about 1 Tbsp of maple syrup
marinate for 30 min.
Marinade should cover the pieces, then bake the salmon at 390° - 400°F for about 20 minutes depending on thickness of the salmon.
