Costco Wild Sockeye Salmon Help Needed

Anyone have a recipe to use with Costco's wild sockeye salmon? The fish pieces are thin and they dry out to quickly. Looking for a recipe that has flavor that will not dry out the fish.

I grill over medium heat on cedar planks, soaked about 30 minutes---a little salt and pepper, maybe a thin coating of olive oil (but I skip that). You can get seconds at a good price here:

Edited to add: I also thaw them in the fridge first. (I get my sockeye from trader joe's but suspect they are similar).

I have noticed the same. I usually cook them from frozen at 425 degrees for about 8 min then I lower the temperature to 260 until cooked to my liking. YMMV

I swab them with evoo, sprinkle non-salt (it draws water out) seasoning- a little dill is good. I grill on non- stick foil at med. heat only to internal heat of 125-130 degrees.

If you have a steamer or rice cooker, portions steamed or in the steamer basket over a batch of white rice makes an easy clean-up one pan meal. Also impossible to dry out.

Medium dice any or all of the following:

Green Pepper
Red Pepper
Sweet Onion

Place in a glass baking dish large enough for the salmon filet. Cover and microwave on high for 1 minutes. Let stand a minute or two. Remove cover and move vegetables to the side of the dish. Lay the salmon in the dish. Coat with a tablespoon of soy sauce, then distribute the vegetables over the salmon. Cover and microwave for 30-second intervals to desired doneness.

Serve with lemon wedges.

To prevent dryness you could poach it.
Cut it into serving sizes, then in a large frying pan put some water and white wine (if you like), or lemon slices and some herbs (dill, parsley or herbes de provence), being water to a boil, add in salmon pieces and cook at a simmer for about 3 - 4 minutes, depending on the thickness of the salmon.

Another way is to make a marinade of:
soya sauce
lemon juice
some garlic (or not)
about 1 Tbsp of maple syrup
marinate for 30 min.
Marinade should cover the pieces, then bake the salmon at 390° - 400°F for about 20 minutes depending on thickness of the salmon.

I eat alot of salmon. I'm getting lazy these days and most often I cut the sockeye into diner portions and freeze them. I take a couple of frozen pieces out and put some olive oil and seasoning on the portion. Seasoning is usually lemon pepper or just a little sea salt and plenty of pepper. While frozen I toss the portions into the air fryer for about 6 minutes and check it. I add minutes occasionally. Usually 6-7 minutes at 400 is just right. The salmon develops a crust on the out side and is usually rare to medium on the inside.

Start cooking on medium low heat with flesh side down for about 6 minutes. Turn over .If much fat comes out the temp needs lowered. Flip over and continue to grill aout the same length of time . if you can slide your turner blade and the skin easily separates it is done. I serve with a white wine and use a white wine butter lemon combination to brush on and serve capers and for my wife tartar sauce. my problem ie with wedge shaped pieces there is often a small piece that needs cut off early or it gets too dry.

Wild Salmon with Horseradish-Mustard Sauce is our "go-to" for the Costco wild salmon

I'm going to try this one. It looks fairly easy.
