Cooking classes Italy

Has anyone ever done a 3-7 day cooking class in Tuscany/Umbria? See all kinds of offers on the internet but would like one that involves equal amount of sight seeing in addition to a few cooking classes. A good mix rather than a "all in" cooking class.
 
We took part in a private 1 day cooking class in Siena and really enjoyed it. It was hands on and detailed to our groups requests. Lella provided an English speaking Translator. She does have 5 day classes and since it is right in Siena, there should be plenty of time for sightseeing.
