Yesterday got a hankering. Made it with what we had on hand, even though it's made with a good bit of low fat milk, came out smooth & creamy.

The remainder of an open can of sweetened condensed milk, about 6oz
The remainder of an open carton of half-and-half, about 6 oz
Add 1% milk to yield 3 cups total
Stir in one 15 oz can of Coco Lopez cream of coconut

Freeze in ice cream maker, then pack into container and ripen in freezer for a few hours.

Tasty served with chopped bananas, drizzled with homemade macadamia nut-caramel, and topped with a few blackberries.

YUM Sounds delicious. With the warmer weather we have bought coconut icecream a few times already. This sounds easy and goo.
