It's been 3 years since my last trip. Have a solo trip coming up over the holidays and wondering what's changed for sightseeing and activities. I expect to visit the old favorites (maybe not the stingrays), but hope to find a couple of things that I haven't tried before as well. Any ideas? Thanks!

Longer ago than the past year, but we loved the biobay kayaking trip in the evening, and they still offer this:

They only offer it certain days, when the moon's not too bright.

Edited to add: they actually modified a date on our behalf, or added an additional date, because our week fell totally outside their schedule, so they scheduled a trip on our last night there. If that's true in your case, it wouldn't hurt to contact them in advance and ask whether it's possible. Their dates as shown on the website are currently:
Dec 13 - Dec 31
Jan 12 - Jan 30

Thanks, Laurie -- I would totally love to do that (but, unfortunately it's not physically in my ability right now -- nor is the mangrove kayak trip). Hopefully some day I'll be able to come up with a way to do those trips.
