According to the room description, the studios at AKV sleep 4 people. Would I be permitted to bring a baby in addition to 2 adults and 2 children?

One under 3 doesn't count so even with the 1BR that allow 5, you can have a child that doesn't count. But it is past crowded, IMO.One child under 3 does not count in occupancy. This is unrelated to some studios sleeping 5--for those, that #5 can be an adult, or 1 Br, such as SSR, that allow 5, even though stated occupancy is 4, but don't supply linens or bedding. The only 1 Br that doesn't allow this is AKV value with a hard 4 person limit (plus child under 3).
What gets iffy is a 1BR like SSR adding a 5th adult without bedding and then also adding 1 child under 3. That I don't know, but I would guess no. But for any "official" occupancy level, you can add one child under 3. Such as 2 BR that sleeps 8 can have 1 child under 3 additional.
Permitted, no, enforced, probably not but no way to be sure. It really comes down to your honesty and integrity. Regardless no way I'd want to do the clown car for a studio with a queen and pullout plus one bathroom for 5.So if I want to stay at an AKV Deluxe Studio with 2 adults and 3 children (all over the age of 3), is that permitted (but it will just be cramped), or is that strictly prohibited and enforced? I have no problems with a 5 year old sharing my bed in order to save money, but I just don't want a situation where I'm prevented from checking in. Thanks!
I have never seen a report of someone on site being asked to leave with DVC. I don't recall a report of anyone being refused to check in but I have seen reports of not being able to list additional person(s) and I have seen reports of not being able to reserve for over. I've also seen reports of DVC make a reservation when over including 6 in a studio (and not a sleep 5 studio).I have read reports of people exceeding occupancy limits at various Disney resorts (not just DVC) being asked to leave, so I would expect them to be prevented from checking in too. And as noted above, the extra person (if sneaked in) would not get perks such as Magical Express from/to the airport or free MB.
The 60-day FP is not a problem, so long as at least one person listed on the reservation is in the party for the same FPs as the unregistered guest. Disney allows that; I assume it's probably to prevent all the calls from people trying to match FPs with friends and family living or staying offsite and only getting a 30-day FP window.

No, you have exceeded occupancy with five in an AKV studio. They only sleep four plus one under the age of three.
