Advice for staying and visiting wine regions in France

Hi all,
I'm looking for any and all advice for staying for a week or 2 in a timeshare in France and taking day trips to the wine regions and wineries. Looking for a 2 bedroom in the fall of 2023 for 5-6 people This trip is what my son's requested for his 30th birthday. I'm expecially interested in visiting Champagne and other northern provences but maybe can do a split stay and stay in one northern region for a week and then in a southern region for a week.
Also if you have any advice on places to eat, let me know.
Anyway, I'm not sure where to start to do research so if you have any ideas I appreciate it. Ten years ago, I worked for a french company and was able to visit Paris and Montpellier so I'm familiar with those cities.

Epernay is one of my favorite towns on Earth. It is an easy train ride from Gare l'Est.

Accommodation? Can't help. It's such an easy trip from Paris, we just stay in Paris. You can be there in as little as 30 minutes. Barely enough time to split a baguette, jam and coffee for breakfast. Take an early train there and a late train home. We're good with a day or two in Epernay. So that gives us more time at Rue Cler and similar.

As for meals, we've eaten at Le Chapon Fin -- walking distance from the train station -- every time we've gone. Last time. We had lunch there, enjoyed it so much we made dinner reservations. They serve classic dishes, inexpensively. They're much like Bouillon Chartier in Montparnasse. If you like Chartier, you'll also like Chapon.

There are just darn few timeshares in Europe in general, and those are out in the countryside and not where N. Americans usually want to travel. I'd book a BnB.

We have an ongoing search request for 2-bedroom units at 3 timeshares in the Dordogne region not too far from Bordeaux for a specific August week next year in addition to Royal Regency outside Paris. It will be a surprise if any come through.

My plan is to book flights into Paris as soon as ff mile options are released. If no timeshare match occurs we will likely book a VRBO or HomeAway near Sarlat a Caneda. If Royal Regency hits, we'll be taking several day trips from there.
