I've not stayed in any of these but recently spent a night in one of the castles overlooking the Rhine, which was a fun experience. Back in the 80s—pre-internet and cell phones—we did a trip that basically involved staying at a variety of old castles, former monasteries, etc., in Germany. We'd lived there for several years earlier, so were comfortable with impromptu travel and didn't want to spend time touring museums but just relax and enjoy the countryside. We'd booked our first night at a castle hotel close to Fankfurt, where we found a brochure from the organization of castle hotels (which still exists). We also had a tour book that focused on unusual accommodations. So each day, we'd look at what neat hotel was a day's drive away from our current hotel, make a call from the landline to book a room, and then spend a relaxing day exploring our way there. At that time, none of them was super expensive and were in mostly rural locations. Still remember that trip fondly!

My niece got married in a castle that has been converted to a hotel/hostel/event center place in Heemskerk, Netherlands which is about 15 miles as the crow flies north-west of Amsterdam. It has been outfitted with modern amenities (including private bathrooms in most rooms) except for an elevator, but still retains the old charm. The wedding was in a ballroom and the reception was in a bigger ballroom overlooking the grounds and gardens. When anybody rents the place for a wedding, or other big event, they get the whole place. We had it from 4pm Friday until 10am on Sunday, so the rehearsal and dinner was held there Friday evening, then the wedding Saturday afternoon, reception in the evening and goodbye breakfast Sunday morning. There is a commercial kitchen on site and all food was provided, including afternoon and bed time snacks. It was great especially for the many out of town and out of country guests as we could spend the entire weekend there with no transportation issues and we had plenty of time to visit everybody.

Chateau de Maulmont in Randan France!
We had an RCI exchange there in 2012: https://www.rci.com/pre-rci/us/en/resort-directory/resortdetails?resortCode=3483.
As we drove to the castle, I recall being awestruck to think we'd actually be spending a week there. I would rank it as the #1 exchange we've ever made since we began timesharing in 1998.

Chateau Maulmont was a great exchange. We did it through RCI some years ago, and also another Chateau in Brittany. Another castle that used to be in RCI and DAE was Schloss Grubhof in Bavaria but near Salzburg, Austria. We exchenged in there three times.

We also spent a week in southern Poland (Silesia) doing a tour by rental car and staying in a different castle each night. One of them near Wroclaw (former German Breslau) had been given to Prussion field marshall Blucher for his service in the Napoleonic Wars.
