A few trips ago I picked some bacon-wrapped scallops in the frozen food area. An instant hit, so I put them on my list for last week. Alas, not there anymore. But I will keep looking!!!

Didn't write anything down, but would definitely pick up the Mac n Cheese if it jumped out at me. Our closest TJ's has lines out the door and under a parking garage with drippy pipes, so that's a no go for me -- just ruins the experience. If I have to stand in line I want it to be in fresh air unless it is over 90 degrees, which is rare for our area. But there are four others between us and Mom's house, depending on which way we take the 30 minute drive.

Our Costco has had these during the summer. Their version had skewers that each had 3 bacon wrapped scallops. The directions had them go right from the freezer to the grill and the timing in the directions was perfect. I'm hopeful they will be back in the spring! Too cold and snowy here in Minnesota for grilling right now.

I arrive at ours between 8 and 9 am on Saturday mornings. Never a lineup. Sometimes when I arrive near 9 am, by the time I leave a line has started forming.

I found these at our Smith's (Kroger) so they're likely at your Freddy's or QFC.

Here's an all TJ's dinner we had the other night.
  • package of TJs seafood blend. Preferably thawed overnight but can be prepared from frozen with low heat on skillet.
  • package of TJs mushroom and herb risotto.
  • TJs Globe artichokes, one person. These are smaller artichokes, so one per person works out nicely.
  • Jar of TJs tomato bruschetta.
Start by simmering the artichokes. Allow a minimum of 30 minutes. This takes the most time, so start this first.

Then prepare the risotto following package instructions. This takes the second longest amount of time.

Next cook the Seafood Blend on low heat in a skillet.
  • If the blend is frozen stay on lowest heat and allow some added time.
  • Since the different components don't all cook at the same rate, you need to pay attention and remove items from the skillet individually. Be sure to remove them before they are all the way cooked so that they don't over cook later.
  • Don't waste the scrumptious liquid that remains in the skillet. Add it to the risotto pot.
  • Return the seafood to the skillet and add a jar of TJs tomato bruschetta. Staying on low heat, finish cooking the seafood blend.
Simple and elegant. If you like, provide some grated cheese to sprinkle on the risotto or seafood blend. Or incorporate some Italian or Provence herb blend or some capers to give it bit more Mediterranean character.
