There's no sauce quite like home made. This is child's play (although children and hot peppers rarely go together well).

Blend peppers, some vinegar and salt until liquified. Strain (or don't strain) into a glass jar. Cover with cheesecloth. Let stand on the counter for a week. Like sourdough starter, and most fermented items, this is best made during cooler weather.

As for that list -- not one featuring Chiltipin peppers. Gotta wonder if they bought just 10 sauces to compare.

Oliver and Asian dishes are basically a comedy mine for the guy who goes by the name of "Uncle Roger."

I hoped Oliver's quest to get rid of the wheelbarrow full of sugar which passes for school lunches went somewhere. But it didn't. He gave it a try, which is more than can be said about most of the people who became famous thanks to food. (Bourdain did a comparison of European and US school lunches for one of his shows.) Those are the only two which come to mind.

Folks who have never tried Marie Sharps salsa from Belize are really missing out. It's the best we have ever found for improving the taste of our food, not just for it's heat. I once complemented a waiter in Belize for his Marie Sharps, and he said, "Yes. My family uses a bottle per week." (They do speak English there.)
