I think they are mainly HNL trips... I checked Maui-Kauai for our upcoming Sept/Oct trip and couldn’t find any.

Southwest is not yet flying to Kauai. Therefore, Hawaiian doesn't have to compete until the date that Southwest starts to fly there. Also, I don't believe Southwest intends in the immediate future to fly between islands other than departure and arrival being in HNL. Therefore, if you need to go from Maui to Kauai you would need to book 2 flights.
