I would much prefer to start from the Custom House in Boston.

In the event you need a 2BR, which Custom House doesn’t have, and you start at Fairway Villas you could then go north through the Hudson Valley which is magnificent. Stop in Kingston for the Maritime Museum and the historic Rondout District. The Massachusetts Turnpike spur intersects the NYS Thruway south of Albany to deliver you to the lovely Berkshires or maybe Jiminy Peak. From there select a northbound route to Vermont, the cradle of leaf-peeping. Maybe Route 100 north to tour a succession of lovely towns. You have to see the Trapp Family Lodge in Stowe after your stop at the Ben and Jerry’s factory tour in Waterbury. End up in Burlington on Lake Champlain and you could just quit traveling because you’ll never find a more beautiful itinerary.

South Jersey is rather flat like Florida. No contour to the landscape. To be really enjoy fall colors you need to be in New England.
