Coolers on airlines

We are traveling to ST Thomas USVI and I have read here and on TA about people taking coolers packed with frozen food (mostly meat) with them on these trips. I am curious what others have done and experienced especially using a soft vs hard cooler and carry-on vs checking-in the cooler. Any problems bringing a cooler whether you carry on or check it with the airline? Any problems with TSA and Customs?

I take a soft side rolling cooler packed with frozen food to St John and the Bahamas. The only issue I have had is some food under x-ray looks like C4. So most of my trips through TSA involve them checking the cooler. I tell them ahead of time that the bag will be flagged that it has frozen food for our island trip. Sometimes they unpack until they see the offending item (ground meat in a tube is usually the culprit). Sometimes they just open the top sort of look in and then let us go. I have never had a problem upon arriving at either destination. We had some cheese curds with us on a trip to North Carolina to a Packer game and we didn't end up eating them. When going through TSA in Charlotte the TSA asked what on earth that was. It's fun explaining it's a bi-product of the cheese making process. Then tell them it's supposed to squeak when you bite into it!!

Also, I don't recommend checking the cooler. You don't want that to get lost and returned a week later.
